
Sunday night, one of Tim’s friends came over to watch the game. I told him that I’d make snacks and I set out to find my recipe for Hooter’s Hot Wings. While I was searching, I came across this gem and decided I’d try it. While I can certainly make the heck outta some hot wings, I thought this would be less greasy and baked. I took a chance on Tim going off on me for trying a new recipe on his friend, and made ‘em anyway. They liked them! Tim’s friend even asked for the recipe.
Of course I did some things differently, I used bread crumbs instead of crackers and tenderloins instead of a breast. Although they’re great for game day snacks, I’m going to add them to the dinner rotation. Maybe you will, too!
P.S. Ladies, if you tell your man that you’ll make snacks for him and a friend, be forwarned that chicken tettrazini is NOT a game day snack and your man may or may not be less than pleased with the choice that you have made for him and his friends. The general rule, according to said man, is that a game day snack is anything that can not be eaten with a utensil. Preferably, it involves dipping. And finger licking. FYI.
It’s almost Thanksgiving, and that’s my motto! So, in early honor of my favorite holiday, I’ll share with you guys my fave recipe. To give proper kudos, my sister in law the cook made these for Christmas year before last. Tim loved them so much that I just had to make them myself. He calls them my 1 Hour Green Beans, cause it takes that long to make them. But yeah, GOOD. Oh, if you don’t eat pork, you can skip to the end of the post, cause this has some swine all up and through it. Sorry.
HERE is the recipe. It’s a Paula Deen recipe and can also be found on The Food Network. The above ones were made in my kitchen. I didn’t use any of the Paula Deen seasoning, instead I use one can of the chicken broth seasoned with garlic & one can regular (don’t use 2 seasoned chicken broths, it will be wayy salty). I also just get a bag of the frozen cut green beans instead of using fresh ones. Oh, and I never use 12 potatoes.

Okay, so I’m no Inga. In any case, my enchiladas were the bomb. I got the idea from Fergie here, and I must admit, her enchiladas look much better than mine — in the picture. I saw them on her spot and began to salivate over them, so she was gracious enough to send me the recipe. I tweaked it a little bit (hers was chicken, mine was turkey; I hate wheat tortillas, she likes em), but it was the best $7.00 meal I’ve ever fed 3 kids with (Girlfriend’s kids were over).
